Peach Crumble Pie

Dough:
1 1/4 cups flour
1/2 T sugar
1/2 t salt
1 stick unsalted butter, VERY cold

Crumble Topping:
1 Cup rolled oats
1/2 Cup pack light brown sugar
6 T all-purpose flour
8 T unsalted cold butter, cut into pieces
1/4 t cinnamon
1/8 t nutmeg

Any fruit filling, use a little cornstarch, sugar, and seasonings and it'll be perfect in the middle!
YUM!
