I was browsing my favorite food blogs the other day and I found the perfect muffin recipe ever! It had wheat flour, fruit, and hardly any fat. I automatically thought "dream muffin"! I've always had a love for muffins but I haven't made too many homemade ones. After I read over the ingredients I started to realize I had everything I needed, except yogurt! But me being the thinker that I am, haha, I remembered I had about a half a cup of sour cream left over! :D Anyway, I just baked these about 15 minutes ago and I loved them so much that I just had to post ASAP! I changed a couple of things in the recipe to work with what I had in my cupboards but they turned out perfectly!

Berry Banana Muffins
1 3/4 cup whole wheat flour
1 tsp baking powder
1/2 tsp salt
1 tsp baking soda
1/2 cup sugar
1/4 cup brown sugar
1 egg
1/2 cup of vegetable oil
1/2 cup of low fat vanilla yogurt or sour cream
1 tsp vanilla extract
1 very ripe banana ( I used 2 since mine were REALLY ripe)
1 cup fresh blueberries
3/4 cup fresh raspberries (I used 1 cup of frozen mixed berries, it's all I had)
I would also suggest squeezing in some lemon juice or zest, I was going to but my half a lemon was all dried up! :(
Directions
Preheat the oven to 350 degrees. Coat a muffin pan with cooking spray. In a large bowl, mix the flour, baking powder, salt, and baking soda until well combined. In another bowl, mix the egg, oil, yogurt, vanilla, sugars, and banana until mixed thoroughly. Slowly combine the dry ingredients into the wet. If using sour cream instead of yogurt mix in now. If using fresh berries mix in half now. Spoon the batter into the muffin tray then top each muffin with remainder of fresh berries and push them inside the batter. If using frozen berries just top the muffins and push them in, the juices will leak if you mix them in. Bake for 18-20 min or until golden brown and tester comes out clean.
So you all need to try this recipe, throw in whatever you want, just keep to the whole wheat flour base and you'll be in Muffin Heaven!
Well they are in the oven as we speak! the batter was yummy, lol. all i had was plain yogurt so that is what i used. Dang girl you have been a baking wizard!!! next i am going to try your WW bread! Thanks! Zack is lucky :)
